Here are a couple of recipes that have worked for our family. Anne requested the burritos. I got this recipe from Angela--and then I tweaked it a little.
Best Friend Burritos:
1 box of Mexican Rice--follow instructions-add chicken and let cook at same time
1 can of black beans (drain and add to rice and chicken)
1 can of green chilies
when all cooked-chop up chicken-put spoonful of mixture on to flour tortilla. Sprinkle with cheese (we like Pepper Jack). Roll up and bake until crispy.
Put whatever kind of topping you like on the top: Guacamole, sour cream, salsa, lettuce, olives etc.
Another recipe-came from another friend--it's very yummy specially when your in the mood for some chinese food.
Mandarin Chicken
Batter:
1/2 cup flour
1 egg
1 tsp. baking powder
1 tsp. sugar
1/3 cup cold water
1/2 cup cornstarch
1 tsp. baking soda
1 tsp. salt
Sweet-n-sour sauce
1 cup tomato sauce
1/2 cup diced onion
1/2 cup crushed pineapple
1 tsp. ginger
1/4 cup vinegar
1/2 tsp salt
1 1/3 cup sugar
1 TBS Soy sauce
1/4 cup cold water w/ 2 TBS cornstarch
Dip chicken chunks into the batter and then deep fat fry (told ya they were good) They turn out really yummy...the batter sticks to the meat and they are like chicken nuggets. The last time I did this, I used some canned chicken-so the meat was already cooked. It was very moist and yummy...good luck and enjoy.
